Is turkey an impossible bird to cook? Well, I used to think so, but after trying brining I change my mind.
Here’s the recipe for the brine. The turkey should be brined for 8 to 12 hours. The quantities are for a 5½ kilo turkey.
Turkey Brining
Use a bucked or very large pan. The quantities are for a 5 ½ kilo turkey
Ingredients
- 6 L water
- 200 g sugar
- 250 g Maldon Salt
- 4 tbsp runny honey
- 4 tbsp maple syrup
- 1 orange
- 3 tbsp peppercorn
- 1 stick cinnamn
- 1 tbsp caraway seed
- 4 cloves
- 2 allspice berries
- 4 star anise
- 2 tbsp mustard seed
- 2 onions
- 3 thumbs ginger
- 1 bunch fresh parsley
Cooking time are much lower of what you would expect, they are for free range turkeys and assume that the turkey is at room temperature before cooking.
Make sure that the turkey has reached 74ºC.

20 minutes before the end of the cooking brush the turkey with bush with maple syrup
